Goat Cheese and Fig Toasts Recipe

Want to surprise your guests and use figs from the local market? Here is how to prepare goat's cheese and fig toasts as a starter or apéritif to replace the traditional warm goat's cheese salad.

This recipe serves 4 people.

 

INGREDIENTS:

  • 1 aged goat cheese (or fresh cheese)
  • 4 large slices of country bread
  • 4 fresh figs
  • 4 fresh walnuts
  • A few sprigs of fresh thyme
  • Olive oil
  • Freshly ground black pepper
  • Sea salt
  • 1 jar of Provence fig jam
  • 1 jar of liquid honey

STEPS: 

1. Preparation

Preheat the oven to 200°C (392°F).

Cut your bread slices.

Cut your figs into crosses or slices, depending on whether you are using fresh or aged cheese and your chosen presentation.

Crack and peel the walnuts, removing any small skins if possible (you can substitute with hazelnuts, pine nuts, or pumpkin seeds).

Lightly brush your bread slices with oil (optional).

For Fresh Goat Cheese Toasts: Place a spoonful of fresh goat cheese in the center of the fig sliced crosswise and place it on the oiled bread slice.

For Aged Cheese Toasts: Cut a slice of goat cheese, place it in the center of the bread slice, and arrange the figs around it.

Sprinkle with crushed walnuts.

Drizzle with a bit of honey and add fresh herbs.

2. Cooking 

Place in the oven on a baking sheet for approximately 15 minutes, until golden and slightly toasted.

Then, add a spoonful of violet fig jam on top of the goat cheese (it's better to add it later to prevent it from grilling too much).

Give it two turns of the pepper mill and a pinch of sea salt before serving plain or with a green salad.

And voilà !

Of course, you can add prosciutto and replace the bread with gluten-free bread or make the recipe in a buckwheat pancake in a skillet.
